NOT TO BE CONFUSED WITH CANADA BEST ABOVE, a very strong brown flour milled from selected high protein wheat Its a high fibre brown but it behaves like a white. Very popular, & is by far the fastest selling brown flour that we have. This is the brown to use as a carrier for softer flours such as rye because it has even higher protein levels than the strong white above, approaching 14%. If you are not sure which brown to go for, use this one.
